I can already see my vegan life is gonna revolve heavily around the grater 🤣 today’s lunch, grated cauliflower with cherry tomatoes. I didn’t have any spring onions (scallions) so I used the inside green bit of leeks instead. With French dressing and “Caribbean salad seasoning”. It’s ok but I can’t stop thinking it would be nicer with feta or Parma ham 🤣 oh well. I will learn as I go along. Maybe some apples and toasted walnuts instead.
As a side note: it is interesting, how vibrant this is, compared to say a frozen ready meal. The colours are so bright and the smell is amazing. Psychologically, this is a more uplifting experience.
